Abstract:
To provide a fat composition for cream, which provides coating cream having a good solidifying property, provides a good flavor and meltability in the mouth, and can suppress temporal stickiness.SOLUTION: Provided is a fat composition for cream, which satisfies the following conditions A and B. Condition A: in a triglyceride composition, a mass ratio of a tri-saturated triglyceride containing a lauric acid residue(s) as a linked fatty acid residue(s) with a total number of carbon atoms of the linked fatty acid residues being 46 is 0.5-4.5 relative to a trilaurin. Condition B: An SFC (Solid Fat Content) at 25°C is 46-75%.SELECTED DRAWING: None
