Abstract:

To obtain a fatty acid synthase mutant gene in yeast which is capable of remarkably improving the producibility of ethyl caproate without deteriorating the brewing specific characteristic, or the like, of wild-type yeast and keeps safety.

This fatty acid synthase mutant gene capable of remarkably improving caproate producibility is obtained by substituting an amino acid (1250th) near the active center of a fatty acid synthase gene in yeast to a prescribed amino acid (threonine, alanine, phenylalanine, cysteine, tyrosine or glutamine).
