Abstract:

PURPOSE: To provide a method for obtaining xanthan gum of high quality from filtered whey or milk products, including whey permeate and milk permeate that have been regarded as difficult feedstock to produce xanthan gum and the fermentation culture medium therefor.

CONSTITUTION: The objective xanthan gum is produced through the fermentation process from filtration-treated whey or dairy products such as whey permeate or milk permeate by using a microorganism capable of converting lactose to xanthan gum.
