Abstract:
To develop a new fermentation technique using fermentation by ascomycetous white wood-rotting fungi having mycorrhizal characteristics.SOLUTION: In the present invention, vital active substance-containing fermented food products are manufactured using production of a vital active substance by raw material fermentation by ascomycetous white wood-rotting fungi having mycorrhizal characteristics, a residual agrochemical in a food raw material is decomposed using decomposition of a poorly decomposable compound, and a contained component is extracted at high speed by utilizing the weakening of cell membranes of a plant.SELECTED DRAWING: Figure 1
