Abstract:
PURPOSE: To obtain the product containing mannose units such as xanthan gum in high yield that has excellent rheologic properties and is useful as a food product, pharmaceutical and chemical by using mannose as part of the carbohydrate components of the fermentation feedstock.
CONSTITUTION: To the culture medium containing malt extract, yeast extract, bacto-peptone, dipotassium hydrogen phosphate and magnesium sulfate, are added mannose, glucose and the like to prepare the fermentation feedstock containing mono-saccharides in which a part of the saccharides is mannose. A microorganism such as Xanthomonas campestris NRRL-1459-14 or the like is inoculated to the fermentation feedstock and they are placed on the rotary table at 28°C for 2 days. Then, the solution is adjusted in its pH to 7.0 and added t the fermenter filled with the culture medium containing mannose and glucose at 29°C under the aeration-agitation conditions for 18 hours whereby the product containing mannose units such as xanthan gum is obtained in high yield.
