Abstract:

PROBLEM TO BE SOLVED: To provide a continuously beer-fermenting system which does not deteriorate the activity of yeast in a fermentation tank and does not thereby cause the deterioration in the quality of the beer.
SOLUTION: The fermentation tank for brewing the beer is characterized by disposing an accumulation material on which a yeast having a coagulation-precipitating property can be accumulated, in the fermentation tank in a state that a fermentation-unfinished liquid containing the yeast is not easily precipitated and is stirred with rising carbon dioxide produced by the fermentation, and intermittently moving the accumulation material to release and reaccumulate the accumulated yeast. By the employment of the fermentation tank for brewing the beer, the beer can continuously be produced, while selectively removing the yeast having the lowered activity to maintain the high enzymatic activity in the tank.
