Abstract:

To provide bread that has reduced yeast smell and fermentation smell, and an excellent taste.

The fermentation taste improver for breadmaking comprises an alginate as an active ingredient and a milk serum mineral and is made into a plastic water-in-oil emulsion. The white bread dough contains the fermentation taste improver for breadmaking. The bread is provided by baking the white bread dough. The fermentation taste improver for breadmaking produces bread having reduced yeast smell and fermentation smell and excellent taste without providing bread with taste such as sweetness, milk taste, etc.
