Abstract:

PURPOSE: To provide a new fermented seasoning having a mild bitter taste and a mellow flavor with good body and entirely different from conventional fermented seasonings, mirins, mirin-like seasonings, etc.

CONSTITUTION: A fermented seasoning is characterized by using as a bitter taste agent a red koji (malted rice) saccharification solution obtained by saccharifying the mixture of steamed rice and liquid red koji with a saccharification enzyme or a red koji extract solution obtained by extracting the pigment of the liquid red koji with alcohol for brewing.
