Abstract:

To obtain filtrate extracted from strained lees of apples usable as raw material for mellow apple vinegar having a fruit ester content and apple vinegar flavor (ester flavor) richer than those of conventional apple vinegar, or mild acidic liquid seasoning having fully fruity feeling of apple flavor and acidity-suppressed taste.

The method for producing the filtrate extracted from strained lees of apples comprises the following process: adding brewed vinegar to strained lees of apples so that whole the acetic acid acidity is 5-10% (W/W), and soaking the lees in the vinegar followed by filtering the lees. Another version of the method for producing the filtrate extracted from strained lees of apples comprises adding brewed vinegar to strained lees of apples followed by acting both enzymes of pectinase and arabanase on the mixture. The method for producing apple vinegar comprises the following process: subjecting the filtrate extracted from strained lees of apples to acetic fermentation so as to obtain apple vinegar raw material unrefined sake, or adding the filtrate extracted from strained lees of apples to acetic fermented liquid after the acetic fermentation. The filtrate extracted from strained lees of apples obtained by the method is contained as a flavor-applying liquid in the acidic liquid seasoning.
