Abstract:

PURPOSE: To obtain a fish, preserved in an alcohol for drinking, optimum as a relish, etc., for SAKE (Japanese ice wine), preservable in a state of a high nutritive value for a long period and good for health without discoloration by utilizing the taste of the fish which is a material.

CONSTITUTION: A fish is divided into three parts of two slices and the backbone and small bones of the resultant fish divided into the three parts are removed. The fish slices after removing the small bones are salted and further desalted. The desalted fish slices are then dried by exposing to cold air and subsequently dipped in alcohol for drinking for a time within the range of 2 to 48 hr.
