Abstract:
PURPOSE: To obtain a new compound, having excellent inhibitory activity against a glucosyltransferase and useful as an anticarious agent, an oral sanitary agent, etc.
CONSTITUTION: This flavonoid polymer having 800-5000 molecular weight is obtained by polymerizing a flavonoid, especially catechins, etc., in the presence of hydrogen peroxide for 1min to 24hr, preferably 1-3hr with a peroxidase which is an enzyme. The flavonoid polymer has the inhibitory activity against a glucosyltransferase of about 50 times based on that of the raw material flavonoid and a glucosyltransferase inhibitor containing the flavonoid polymer as an active ingredient is useful for preventing dental caries, etc. Furthermore, since the flavonoid polymer has no peculiar taste, odor, etc., it can be added to a food such as a dentifrice, a mouthwash liquid, a troche and further a juice, a gum or a candy for the purpose of preventing the dental caries.
