Abstract:

PROBLEM TO BE SOLVED: To provide a flavor composition, which can be used for transparent beverages, causes no deterioration of food flavor nor other problems, e.g. foaming, and is made aqueous, and also to provide a method for producing flavored foods using the same.
SOLUTION: This flavor composition is composed of a perfumed oil, solvent, fatty acid (mainly 8-16C fatty acid), and sucrose/fatty acid ester whose monoester content (Y) satisfies the following condition: Y (wt.%)≥2.5X+50 (X is a carbon number of the constituent fatty acid). This method produces a flavored food using the above composition diluted with water.
