Abstract:

PURPOSE: A flavor green tea, obtained by coating a dried and sliced peel of a citron with a polymerized phosphate, and capable of giving nice green tea having a citron flavor only by passing hot water therethrough and withstanding storage for a long period.

CONSTITUTION: The peel of a citron is sliced and dried, and 10kg resultant dried peel is dipped in a solution prepared by diluting 10W20g polymerized phosphate with water in an amount of 10W20 times of that of the peel. The sliced peel of the citron after dipping is then dried by a suitable drying method. The phosphoric acid in this case has a thirst quenching property, and prevents moisture absorption and evaporation of water in the slices and further loss of flavor. The readily water-soluble phosphoric acid is capable of releasing the coating on dipping in hot water, and the slices absorb water to emit an aroma unique to the citron. The peel slices incorporated with green tea provide a novel flavor green tea, having improved aroma, and preservable for a long period.
