Abstract:
To provide a flavor imparting agent that can have a lard-like flavor (flavor similar to lard) using only vegetable material, and to provide a method for producing the same.SOLUTION: Provided is a flavor imparting agent that contains eugenol by 0.003 mass ppm or more, cinnamaldehyde by 0.05 mass ppm or more, and anethole by 0.1 ppm or more in the flavor imparting agent, and in which the content (mass) ratio of eugenol, cinnamaldehyde, and anethole in the flavor imparting agent is eugenol: cinnamaldehyde: anethole = 0.003 to 0.5: 0.05 to 5: 0.1 to 10. Preferably, the eugenol is derived from nutmeg, the cinnamaldehyde is derived from the bark of cinnamomum tree, and the anethole is derived from star-anise and/or anise.SELECTED DRAWING: None
