Abstract:
To provide a flavor improving composition changing astringent taste to soft bitter taste.
This flavor improving composition for food and drink contains as the active ingredient, a solvent extract which has as the main ingredient lyoniresinol of plants of Quercus sp of Fagaceae. The composition can change astringent taste or bitter taste especially of food and drink and/or alcohol drink containing tannin to soft bitter taste without greatly influencing basic taste. Food and drink added with the composition is also provided.
