Abstract:
PURPOSE: To efficiently provide a flavored oil giving high, refreshing aroma, also free from decline in the quality of the flavoring matter therefor after treatment.
CONSTITUTION: The flavored oil characterized by being obtained by the following process: the aroma component in a flavoring matter is dissolved in and made to migrate into carbon dioxide in a liquid or supercritical state; the resultant aroma component-contg. carbon dioxide is vaporized and brought into contact with an edible oil to make the aroma component absorbed into the edible oil.
