Abstract:

PROBLEM TO BE SOLVED: To obtain the subject flour capable of obtaining TAKOYAKI (a baked dumpling containing a sliced octopus meat) having a gook eat feeling, generally soft, and good in feeling of melting in a mouth not only on just after baking but also on reheating after a preservation under a frozen state.
SOLUTION: This flour for baked dumping containing sliced octopus meat, is obtained by blending 3-20 pts.wt. soluble starch with 100 pts.wt. wheat flour. A viscosity of 10wt.% aqueous solution of the soluble starch insoluble to a cold water and soluble to a hot water and obtained by suspending a starch in water and decomposing with sodium hypochlorite, etc., is preferably 5-500cp range, and the soluble starch produced from a glutinous variety, is preferable.
