Abstract:
To provide a foamable emulsified oil-in-water type composition which has good emulsion stability and freezing resistance after foam formation even at a low oil and fat content, especially, less than 40 mass%, and is suitable for mixing whipping with a fresh cream.SOLUTION: A foamable emulsified oil-in-water type composition contains 0.001-2 mass% of a tremella fuciformis polysaccharide. The composition preferably contains 1-20 mass% of a nonreducing starch syrup as a solid content. The composition preferably contains a milk raw material having a content of a phospholipid in the milk-derived solid content of 2 mass% or more.SELECTED DRAWING: None
