Abstract:
PURPOSE: To provide a foamable oil drop-in-water type emulsified fat composition having the same or better mouth meltability, milk body taste and delicious taste as those of fresh cream by specifying the content and denaturation degree of an alubumin group protein in milk protein.
CONSTITUTION: Milk protein whose 20-60% is an alubumin group protein having a denaturation degree of ≤50% is used. The employment of the milk protein can largely reduce the using amounts of other emulsifiers, not require the addition of a polyphosphoric acid salt, eliminate bad tastes, bitter tastes and salty taste appeared on conventional compound type compositions, and impart also a mouth-meltable cooling touch.
