Abstract:
PROBLEM TO BE SOLVED: To provide a foamable oil-in-water-type emulsified article capable of inhibiting flavor deterioration and containing soybean extract.SOLUTION: There can be provided a foamable oil-in-water-type emulsified article containing a soybean extract and capable of inhibiting flavor deterioration by containing the soybean extract derived from all fat soybean and having lipid content in a solid component of 15 mass% or less and mass ratio of protein content to hydrocarbon content of 100 to 200 mass% and laurin-based oil and fat. Although the soybean extract is contained, it can be distributed for 1 to 3 days at not only cold storage, but also room temperature because deterioration of flavor derived from soybean is less.SELECTED DRAWING: None
