PURPOSE: To obtain a coffee whitener, comprising fats, a carbohydrate and a protein and further a foaming agent containing soybean protein and a casein salt in specific amounts as dried substances and a stabilizer such as a phosphate or a citrate, excellent in foaming properties and useful as coffee beverages, etc.
CONSTITUTION: The coffee whitener excellent in foaming properties is obtained by blending 10-50wt.% fats such as vegetable fats and oils with 20-70wt.% carbohydrate such as corn syrup or lactose, 4-20wt.% protein such as soybean protein or a casein salt and 0-10wt.% emulsifying agent such as glycerol ester of a fatty acid and further blending the prepared blend with a foaming agent containing soybean protein in an amount of 0.5-15wt.% and a casein salt in an amount of 0.5-15wt.% based on the weight of the whitener as dried substances and 1.5-4.5wt.% salt such as a phosphate or a citrate and a mixture thereof as a stabilizer with water, then homogenizing the resultant mixture in a homogenizer, providing an emulsion, filling an inert gas in the obtained emulsion while applying a pressure, dispersing the gas-liquid mixture to form bubbles of a fine size in an in-line disperser, spray-drying the emulsion and granulating the formed solid. Furthermore, the objective mixed powder comprising the foaming powdery coffee whitener and other ingredients is provided.
