Abstract:

PURPOSE: Acid-treated sea weed or the combination thereof with starch or animal or vegetable protein is used to control the texture of kneaded food of fish, shell and meat.

CONSTITUTION: Sea weeds are brought into contact with an organic or inorganic acid, then, as it is, or after washing with water, made into strings, fibers, powders or granules to give water-containing or dried products. Or a part of acid-treated product is neutralized with sodium or magnesium compounds, then the product is made into an appropriate form. Further, the product is combined with starch as potato or wheat starch or animal or vegetable protein as yoke, gelatin, soybean protein and they are used to control the texture of kneaded food of fish, sheel and meat.
