Abstract:

PURPOSE: To provide a food additive useful not only for softening the cereals such as rice, beans, etc., but also for improving the taste and the nutrient value of the cereals, by adding various nutrients to a mixture of enzymes.

CONSTITUTION: A food additive composition composed of (A) 100 parts by weight of a mixture containing an enzyme mixture of proteinase, amylase, lypase, and cellulase, and nearly equal amount of starch as a diluent, (B) 7W13 parts of cornflour as vitamin A source, (C) 7W15 parts of powdery kelps such as tangle as vitamin B source, (D) 3W8 parts of natural calcium powder as calcium source, and (E) ≤1 part of embryo buds of rice. Usually 15W20g of the additive is added to 1kg of food.
