Abstract:
To provide a food component alleviating a sudden postprandial elevation of blood glucose level and a food composition containing an effective amount of the component.
This food composition is obtained as a result of finding out that lactic acid of a culture supernatant of lactic acid bacteria significantly inhibits the elevation of blood glucose in glucose load tests. It is Ascertained that the mechanism of actions thereof is based on α-glucosidase inhibitory actions of lactic acid.
