Abstract:

PURPOSE: To obtain a food composition readily formable of W/O or O/W emulsion and having improved stability by adding chitosan or aqueous solution of organic acid of said chitosan to the food containing water, oils and fats or organic acid.

CONSTITUTION: Chitosan or aqueous solution of organic acid of said chitosan is added to a food containing water, oils and fats or organic acid such as mayonnaise, dressing, butter or margarine in a range of 0.01-3wt.% as chitosan.
