Abstract:

PROBLEM TO BE SOLVED: To provide a cheese-containing food which does not have a mealy touch, and has a smooth tissue, good meltability in mouths, and a refreshing sour taste.
SOLUTION: This method for producing the cheese containing food, is characterized by formulating soft natural cheese and glucono delta-lactone so as to contain ≥15 wt.% and ≥0.05 wt.%, respectively, adjusting the mixture so that pH and water content become 4.0 to 5.2 and ≤80 wt.%, respectively, and then thermally melting the mixture.
