Abstract:

PURPOSE: The titled novel solid food, obtained by incorporating an ascorbic acid with an alga or edible yeast coated with an acidic water-soluble high polymer, and having improved flavor and sense of eating.

CONSTITUTION: A food obtained by coating (A) an alga, e.g. chlorella, or edible yeast, e.g. baker≤s yeast, with (B) an acidic water-soluble high polymer, e.g. cellulose acetate phthalate, in an amount of 2W20wt% based on the component (A), and incorporating (C) ≤30wt%, based on the total amount of the food, ascorbic acid therewith. The ascorbic acid component may be coated with the component (B).
