PURPOSE: The titled food, containing a specific amount of an acidic polysaccharide, and having the stably retained lysozyme lytic activity.

CONSTITUTION: A food containing 5pts.wt. or more, based on 1pt.wt. lysozyme, acidic polysaccharide, e.g. chondroitin sulfuric acid, pectin or carrageenan, in a food containing lysozyme, e.g. custard cream, canned black tea or boiled fish paste, containing about 5W100ppm lysozyme (salt).
