Abstract:
PURPOSE: To obtain the titled food and drink useful for robustness, healthy stomach, etc. free from bitterness, astringency, etc., without causing problems of toxicity, etc., containing a compound obtained by reacting ginsenoside, a main component of an extract of ginseng, with a specific enzyme.
CONSTITUTION: First, an aqueous solution containing (A) ginsenoside and (B) an α-glycosyl saccharide compound (e.g., sugar, partial hydrolyzate of starch, etc.) is reacted with (C) α-glycosyl transferase, to give α-glycosyl ginsenoside. It is then purified with a magnesia adsorbent, porous synthetic adsorbent or ion exchange resin, and added to food and drink, to give the desired food and drink.
