Abstract:
To provide an alcoholic fermentation food or drink and acetic acid fermentation food or drink developing clear red color, having mild taste and flavor free from harshness and having little astringency.
The invention provides a food or drink produced by using ancient rice as a raw material and containing an alcoholic fermentation product obtained by a step to perform solid-liquid separation of the raw material after saccharifying treatment and organic acid fermentation treatment, and a step to perform alcoholic fermentation treatment of the separated liquid obtained by the solid-liquid separation step.
