Abstract:
PURPOSE: To obtain a food which can prevent acceleration effect of sugars on caries and can inhibit side effects in digestive organs by specifying the amt. of galactose. CONSTITUTION: (A) Sugars except for galactose by 100 dry pts.wt. (TGT) is mixed with (B) 2 to 10TGT of galactose (e.g. which is prepared by hydrolyzing lactose with β-galactosidase), and the mixture is controlled to have pH in an acid region by preferably using an org. acid. Then an alkali salt such as phosphate and/or citrate as a buffer is added to the soln. to obtain the buffer volume Kap satisfying Kapx=y (wherein Kapx is the buffer volume of pHx and (y) is the amt. (ml) of 0.1nHCl necessary to change 100ml soln. of pH7 to pHx). The obtd. nutrient is added to a food so that the food has an effect to decrease pH in dental plaque and to protect teeth by the nutrient.
