Abstract:

PURPOSE: To obtain the subject composition having specific properties and effects such as intestinal function controlling action and improving action on hypercholesterolemia by heat-treating corn starch and hydrolyzing the produced roasted dextrin with α-amylase and glycoamylase.

CONSTITUTION: Corn starch is heat-treated with hydrochloric acid to give roasted dextrin, which is hydrolyzed with α-amylase and glycoamylase and ≥1/2 of formed glucose is separated and removed to give the objective dextrin comprising ≥20% food fibers based on the components except glucose, 25-30% glucose residue having 1→4 glycoside bond based on the components except glucose, having 99-1,300 average molecular weight of the components except glucose, ≤20% variability range of Y value of average molecular weight obtained by the formula (Y is average molecular weight of the components except glucose; X is amount of glucose residue having 1→4 glycoside bond determined by Hakomori's methylation method) from the measured value, ≤33% glucose content and ≥13% content of food fibers in the whole components.
