PURPOSE: To provide chocolate food provided with a taste like fat, a flavor profile similar to refined chocolate, an excellent color, viscosity adjustment and stability. CONSTITUTION: This fine powdery cocoa paste composition provided with an improved food modifying property for a chocolate produce contains the hydrated particulates of cocoa whose the particle size is about 0,1-about 20 microns dispersed in a sugar solution.
