Abstract:
PURPOSE: Premix powder for food useful for DAIBAN YAKI (pancake baked thin and stuffed with sweet red bean paste), KAITENYAKI (pancake baked in a rotary way and stuffed with red bean paste), hot cake, OKONOMIYAKI (thin, flat cake of unsweetened batter fried with bits of vegetables), etc., having improved spread of dough free from dough cut, uniformly containing gelan gum.
CONSTITUTION: Premix powder is blended with gelan gum (≤3wt% based on the total amounts and, if necessary other gum.
