Abstract:

PURPOSE: To provide a composition for improving the qualities of foods, having excellent oil absorption and emulsifying effect, capable of preventing the cooking loss of foods, and containing yeast and a polysaccharide derived from red algae.

CONSTITUTION: A composition containing 1W99wt% yeast (living cells, dried cells, yeast extract, yeast proteins, etc.) and 99W1wt% polysaccharide derived from red algae (e.g. carrageenan, agar, furcellaran, etc.). The composition is added to food so as to give the high quality food containing 0.1W20wt% of yeast and 0.05W 3wt% of the polysaccharide derived from red algae. The weight ratio of the yeast and the polysaccharide is 1W99:99W1.
