Abstract:

To provide a food raw material packed in a container, not only capable of readily being cooked by a microwave oven, but also capable of being cooked into steam bread-like food scarcely causing boiling-over by microwave oven cooking and further to provide a food raw material packed in a container, scarcely causing boiling over by microwave oven cooking and capable of providing a steamed bread-like food not having hardness like rubber and having full texture.

The food raw material packed in a container capable of forming the steamed bread-like food is composed of a container and a food raw material packed in the container. The food raw material packed in a container can form the steamed bread-like food by adding 50-100 pts.wt. water and/or cow milk to 100 pts.wt. food raw material, kneading the mixture, heating the kneaded material together with the container by a microwave oven and expanding the kneaded material to a volume of 110-160 vol% based on 100 vol% container volume thereby. The food raw material packed in the container comprises wheat starch and 30-80 pts.wt. oil and fat, 5-20 pts.wt. yolk powder, 0.1-5 pts.wt. dietary fiber, 10-25 pts.wt. blowing agent, 5-20 pts.wt. dextrin and 1-5 pts.wt. thickener and ≤10 pts.wt. water, based on 100 pts.wt. of the wheat starch, and the food raw material is packed in an amount of 30-60 vol% in 100 vol% of the container volume. According to the present invention, the steamed bread-like food hardly boils over when cooking the food raw material by the microwave oven.
