PURPOSE: To obtain the title food product which is high nutritious, can be readily made into preparations such as powder or tablets and has excellent storability and transportability by freeze-drying the essence prepared by crushing eel livers, heating and filtering the crushed livers.

CONSTITUTION: The pretreated eel livers are filtered and the filtrate is freeze dried to give the subject food product.
