Abstract:

PURPOSE: To obtain an edible vinegar having mild and improved taste and flavor from the seed and the wooly core of pumpkin, by extracting the speed and the wooly core of pumpkin, and adding the extracted component to an edible vinegar or an aqueous solution of acetic acid.

CONSTITUTION: Edible vinegar or an aqueous solution of acetic acid is added to the speed and/or the wooly core of pumpkin and treated with a mixer to effect the simultaneous stirring and grinding treatment. As an alternative method, the ground seed or wooly core of pumpkin is put into edible vinegar or an aqueous solution of acetic acid, and the mixture is agitated. The mixed liquid produced by the above method is centrifuged to separate impurities and filtered to obtain edible vinegar free from precipitate, having improved taste and flavor and suitable for health promotion.
