Abstract:
The liquid food product, such as a fermented milk, fruit juice, a mixture of milk and fruit juice, or a vegetable juice, contains dehydrated particles of lactic bacteria coated in a vegetable fat that is solid at ambient temperature to form granules with a mean size of between 95 and 300 microns, and preferably 150 - 200 microns. The granules contain at least 1.1010 UFC of lactic bacteria per gram in a food product with a pH of 4.5 or below and a water content of at least 83 per cent by weight. The lactic bacteria are selected from lactobacilli and bifidobacteria, and they are dehydrated by lyophilisation prior to granulation. The vegetable fat coating can be hydrogenated or not, esterified or not, and can be a wax or fatty acid; it can be selected from palm oil, cocoa butter, peanut butter, carnauba wax and other substances.
