Abstract:
PURPOSE: To improve properties of foods and to enable adaptation of foods to a feed of animals by compounding a specified amt. of lysophospholipoprotein into foods such as sauce, bakery products, ice cream and dairy products. CONSTITUTION: A dried lysophospholipoprotein(LPLP) or dried LPLP-contg. material is compounded into a food such as sauce, spread, mayonnaise, dressing, soup, bakery products, cram, ice cream, and dairy products to prepare a food containing LPLP. The LPLP is obtd. by modifying and converting phospholipoprotein with phospholipase-A. and the conversion rate is preferably >=10%, more preferably 40 to 100%. As for the dry LPLP or dry LPLP-contg. material, a material having <=10wt.% moisture is preferably used.
