Abstract:

To provide a formed processed food which can be easily formed, with a dough surface having reduced stickiness by the formation of fine gel particles of calcium alginate on the surface to come in contact with other objects during cooking and processing of the formed processed food.

Alginic acids are kneaded into the dough of a formed processed food, and the surface to come in contact with other objects during cooking and processing is contacted with a calcium-containing aqueous solution or powder. During cooking and processing of a calcium-containing dough, the surface to come in contact with other objects is contacted with an alginic acids-containing aqueous solution or powder. An alginate and hardly soluble calcium are kneaded into a dough and the dough surface is contacted with an acidic aqueous solution during processing.
