Abstract:
PROBLEM TO BE SOLVED: To provide a method for fractionating and concentrating an edible peptide in which a large amount of the edible peptide can safely and efficiently be treated. SOLUTION: This method for fractionating and concentrating the edible peptide is characterized by placing a liquid prepared by hydrolyzing a protein with a proteolytic enzyme in a water tank, forming two or more separation chambers using one or more partitions forming an electroconductive hydrogel, forming an electrode part filled with an alkali solution and provided with the electroconductive hydrogel or a dialytic membrane at one end and an electrode part filled with an acid solution and provided with the electroconductive hydrogel or the dialytic membrane at the other end, energizing both the electrodes with a DC current at a constant electric power until a rise in voltage is eliminated and recovering the peptide collected in the respective separation chambers with the peptide in the protein hydrolyzate is not moved.
