Abstract:
PROBLEM TO BE SOLVED: To provide a method for freezing and storing a Kimuchi (korean pickles) storage house, capable of preventing excess aging due to natural aging by freezing and storing Kimuchi during a prescribed period in the Kimuchi storage house and then aging and storing the Kimuchi.
SOLUTION: This freezing and storing method comprises a freezing and storing step for freezing and storing Kimuchi by retaining interior temperature in a Kimuchi storage house to set freezing and storing temperature during freezing time set through an operating part 32 and a thawing, refrigerating and storing step for retaining the interior temperature in the house at a refrigerating and storing temperature after the set freezing time is passed through to thaw the Kimuchi stored in the house and then refrigerating and storing the Kimuchi, in a Kimuchi storage house for refrigerating and storing Kimuchi stored in the house.
