Abstract:

PURPOSE: To prevent the freezing denaturation of yolk, enable the regeneration of the good flowability of the yolk after thawed and make it possible for the yolk to be finely and homogeneously dispersed in an extracting solvent, by adding a specific amt. of ethyl alcohol to the yolk and then freezing the mixture.

CONSTITUTION: Yolk is mixed with 2W9wt.%, preferably 4W6wt.%, of ethyl alcohol and then frozen preferably at a freezing storage temp. of -5W35°C.
