Abstract:

PROBLEM TO BE SOLVED: To obtain a freshness maintaining agent capable of maintaining the freshness of meats, vegetables and fruits for a long period by loading an isothiocyanic acid compound on a carrier selected from natural mucopolysaccharides and solid organic acids.
SOLUTION: This freshness maintaining agent is obtained by loading an isothiocyanic acid compound (preferably allyl isothicyanate) on a carrier selected from natural mucopolysaccharides (suitably, a xanthan gum, a polysaccharide of tamarind seed and guar-gum) and solid organic acids (suitably adipic acid, sorbic acid and malic acid) preferably by 0.2-8wt.% based on the weight of the carrier. in order to obtain the objective freshness maintaining agent, the carrier is heated under a reduced pressure at 50-60°C, the isothiocyanic compound is supplied thereto by a method of spraying, etc., and cancelling the reduced pressure to attach the isothiocyanic acid compound to the carrier. Further, it is preferable to pack the freshness maintaining agent into a Vinylon film, a laminated film of a cellophane with a nonwoven fabric, etc., since the vaporizing property of the isothiocyanic acid compounds is further controlled and suppressed.
