Abstract:

PURPOSE: To obtain an extremely easily edible fried food without losing the shape of cooked rice in a stage of applying a coating and impairing the flavor and texture essential to the cooked rice even in forming the rice into an optional shape and frying the formed rice into a fried food.

CONSTITUTION: Cooked rice to which an edible binder is applied is shaped into a prescribed form and a coating is then applied to the surface thereof. In order to further approach the texture to a natural one, the cooked rice to which the edible binder is added is shaped into the prescribed form and heat- treated to apply the coating to the surface thereof. Thereby, various cooked rice dishes can be converted into fried foods in an optional shape and responded to potential needs.
