Abstract:

PURPOSE: To obtain a fried tofu (soybean curd), containing an ink of a cuttlefish and improved in taste and nutrients by including the ink of the cuttlefish which is a marine product in a vegetable tofu.

CONSTITUTION: A fried tofu containing an ink of a cuttlefish is obtained by placing an ink 2' of the cuttlefish, preparing a mixture liquid, heating the resultant mixture liquid and placing any of a coagulant 3 for coagulating soybean milk, e.g. a bittern, seawater or calcium sulfate in the mixture liquid just before boiling the mixture liquid, separating an excessive amount of water from the ink 2' of the cuttlefish in this state, placing the soybean milk and ink 2' of the cuttlefish kept in a solid form in a box having a bleached cotton cloth laid therein, placing a weight thereon, draining both for about a required time, then cooling and finishing the tofu, frying the tofu T in an oil 5 and preparing a thick or a thin fried piece of the tofu T'.
