Abstract:

To obtain an improver for a frozen cake capable of maintaining the goodness in texture and further suppressing a cake from deteriorating caused at the time of freezing and preserving the cake by including a polyglycerol fatty acid ester as an essential ingredient therein.

This improver for a frozen cake is obtained by dispersing a polyglycerol fatty acid ester consisting essentially of a polyglycerol mono-fatty acid ester in water and/or an edible oil and fat. The amount of the formulated polyglycerol fatty acid ester is preferably 3-20 wt.%. The polyglycerol fatty acid ester preferably contains fatty acids thereof consisting essentially of a 14-22C unsaturated fatty acid such as oleic acid and a polyglycerol consisting essentially of diglycerol. A frozen cake is preferably prepared by formulating the improver for the frozen cake therewith.
