Abstract:

PROBLEM TO BE SOLVED: To provide a frozen dessert elongative like rice cake, and having new palate feeling, and to provide a method for producing the frozen dessert.
SOLUTION: This frozen dessert is obtained by being regulated so that total solid accounts for 30-60 pts.wt. based on 100 pts.wt. of the frozen dessert, and also adding starch thereto; wherein it is desirable that the starch to be used is tapioca starch, and the amount of the starch added is 0.1-10 pts.wt. based on 100 pts.wt. of the frozen dessert. The other objective method for producing the frozen dessert comprises the step of adding a starch-containing solution to the frozen dessert during a filling process after a homogenizing process.
