Abstract:

PROBLEM TO BE SOLVED: To prepare a frozen dessert having powder snow-like appearance and capable of smoothly melting in the mouth by specifying the average size and the average bulk density of ice crystals in specific ranges.
SOLUTION: This frozen candy is prepared by specifying the average size and the average bulk density of ice crystals in the ranges of 10-100 μm and 0.25-0.70 g/cm3, respectively. Further, the frozen candy can be produced by charging a frozen candy mix into a spray cooling machine to convert the mix into fine granules and cooling the granules. Any of ice candy mix which is used in the production of an ordinary frozen dessert can be applied in this process. Examples of the mix include a sherbet mix, an ice cream mix, an ice milk mix and a lacto-ice mix.
